The Secret…

So, I love carbs. I’ve already brought this up on my blog before. Remember that one time…

Anyway, a good portion of my family has renounced carbs (and they look awesome, so go them), but I have yet to muster up the willpower to do so. I still love bread. And baked goods. And above all else, potatoes.

POTATOES. YUM.

In particular, I LOVE french fries, but I hate adding the extra fat to fry them or the extra preservatives to buy them pre-cut and pre-awesomed in a bag. So, I have been experimenting with ways to make one of my favorite foods less bad for me and those I serve them to. And recently, I found THE SECRET to fool-proof, perectly crispy oven fries.

And the best thing to do with the best things in life is share them. So, share I will. Here it is, THE SECRET:

Pat off your fries to get rid of excess water.

Anticlimactic, huh? But, really, that’s it! That’s the secret! All you have to do is take an extra 5 minutes while your oven is preheating to press a paper towel to all sides of your fries to get some of the excess water out. Spray a little olive oil on a cookie sheet, place your now semi-dry potato wedges/pieces/fries onto said cookie sheet, spray a light mist of olive oil on top, add some salt on top, and pop those babies in the oven! Bake them at 450 degrees for about 25-30 minutes or until they are crispy and brown. No more droopy oven fries!

The same principle works for making homemade hashbrowns too, you just have to put a little more elbow grease into it. Grate your potato, and wrap the pieces in a few layers of paper towel. Then squeeze those potato bits until your paper towel is literally dripping from potato juice (doesn’t that sound delightful) and you can’t get out a single drop more. Put them in a skillet with some oil and salt, and I promise, they will be toasty brown in no-time.

I promise, it will work. Go try it, right now, and you can thank me later.

(To my non-potato eating family members- I have yet to try this on sweet potatoes since they don’t really have lots of juice. When I come up with an awesome sweet potato oven fries recipe, I promise I will share! The cafe down on our block has THE BEST sweet potato fries I’ve ever had… if you come visit I promise I’ll take you there!)
